Chicken Fried Rice










Combine:
1 cup cooked diced chicken
1 tbsp. soy sauce
1/2 tsp.
*Set aside
Brown 1 cup of rice in hot oil, reduce heat.

Add:
chicken mixture
2 1/2 cups of chicken broth
*Simmer covered 20-25 minutes

Stir in:
1/2 cup chopped onion (i never do)
1/4 cup thinly sliced celery
1/2 cup sliced fresh mushrooms( i never do)
*Cook uncovered until all liquid is absorbed (push to a side)

Add:
2 slightly beaten eggs, and cook until almost done.
*Stir all together and serve immediately.
