Cheese-Stuffed Shells in Marinara Sauce















Prep Time: 15minutes  Bake Time: 30 minutes

Ingredients:
12 dried jumbo whole-wheat or regular pasta shells, prepared according to pkg. directions.
1 cup (4 oz) shredded reduced-fat mozz. cheese, divided
1 cup (8oz) fat-free or reduced-fat ricotta cheese
1/2 cup (2 oz) freshly shredded parmesan cheese
1 large egg
1/4 tsp. ground black pepper
1 container (15 oz) Marinara Sauce

Preheat oven to 350 degrees. Combine 3/4 cup mozz. cheese, ricotta cheese, parmesan cheese, egg, and pepper in a medium bowl. Stuff each shell evenly with cheese mixture; place in ungreased 9x13 baking dish. (I grease my pan for less chance of burning). Pour sauce over shells. Bake for 25 minutes or until bubbly. Top with remaining mozz. cheese. Bake for an additional 5 minutes or until cheese is melted.

Makes 6 servings.

Chicken Enchiladas









(Recipe from The Mormon Cookbook)

2 cups chopped cooked chicken
1 cup of sour cream
1(7oz) can chopped green chilies
1 cup chopped onions(I use minced onions)
2 tbsp. butter
1/2 tsp. salt
4 cups shredded Monterey Jack cheese
10 flour tortillas
1(15oz) can mild enchilada sauce
chopped green onions to garnish(optional)

*Combine chicken, sour cream, and green chilies. Set aside. In another pan saute' onions and butter until golden. Add onion, salt, and 2 cups of cheese to chicken mixture. Dip tortillas in enchilada sauce to soften. Spoon about 1/2 cup of chicken mixture into each tortilla. (I do 1/4 cup). Roll each tortilla up and place close together in a greased 9x13 inch pan. (It says 5 per pan but I can usually get 6-8 in one pan, depending on the size of tortillas). Cover with remaining cheese( I would wait until 5 minutes left of cooking time before putting on the cheese, less chance of burnt cheese). Bake uncovered at 350 degrees for 20-30 minutes. Garnish w/green onions and serve.
*Makes 10 enchiladas.

Chicken or Steak Fajitas










(I got this recipe from the Internet)

makes 2 servings
200g chicken or beef, sliced in strips (I made w/both)
1 onion, sliced into rings (I used minced)
1 bell pepper (I used a larger variety of peppers)
2 cloves of garlic
taco/mexican seasoning
1/2 cup chicken broth
salt and pepper
flour tortillas (optional)
rice (optional)

1. Add broth, onion and pepper to a non stick skillet and begin cooking on medium heat.
*When they start to wilt slightly, add salt and pepper.
2. After cooking about 5-7 minutes, add chicken or beef strips and garlic. Cook 5 minutes more or until the meat is almost cooked through.
3.Add mexican/taco seasoning. And cook until liquid is almost gone. Taste and add salt and pepper as needed.

Websites taco/mexican seasoning mix:
1 1/2 Tbsp. chili powder, 1 tsp. cumin, 1 tsp. oregano, 1 tsp. smoky paprika(or reg. paprika), 1/2 tsp. garlic powder or 1 tsp. garlic salt and a pinch of cayenne.
(I used taco seasoning mix packet from the store).

Hello fellow food lovers! I'm going to try this Blog out and see how it does. If you saw my facebook that I mentioned the movie "Julie and Julia" you know why I'm doing this. Its been kinda fun! Now, I'm not going to the extreme like the movie, because there are alot of days I just don't feel like cooking, or no time, so its not going to be a everyday thing. But I will post a picture of the meal along with the recipe since I'm sure your like me and hate to pass up trying good food! I'm not the best cook, but getting a little better each time I try. So, good luck and have fun eating!
